Lunch at my house
Rice and Yellow Split Peas
1 cup brown rice
1 cup yellow split peas
5 cups water
2 onions, diced
2 stalks celery, diced
2 carrots, diced
1 tablespoon curry powder
1 tablespoon vegetable oil
salt
Put the rice and split peas in a large, tall* pot. Wash with cold water 3 times, pouring off water through a strainer. Add 5 cups water and diced vegetables to the pot and start cooking on high. Stir in the curry powder and oil. As it comes to a boil, turn down to simmer. (The oil controls foaming.) Cover with a lid and cook for 45 minutes or until rice is cooked and peas are mushy soft. Stir the pot contents, adding salt to taste. Mash to meld and stir again.
*A tall pot reduces chances of boiling over.
To save time and for convenience, this dish can be made in a pressure cooker or Instant Pot.
Serve with a salad, and a side vegetable such as broccoli, zucchini squash, or collard greens.
Next day use leftovers:
Either as a base for veggie burgers adding breadcrumbs and quick oats to thicken, flavoring with soy sauce, dried herbs, and spices.
Or simply add water to make soup.
Salad and Dressing:
6 leaves romaine lettuce
4 leaves red leaf lettuce
4 leaves of Bok choy
A few leaves of spinach or arugula
Parsley or other herbs
1 cucumber
4 tomatoes
I lime, juice of
Avocado oil OR diced avocado
2 tablespoons nutritional yeast
½ cup of pepitas (pumpkin seeds)
Wash the first 4 ingredients and cut into shreds and again in the other direction. Wash and mince the herbs. Dice the cucumber and tomato. Put everything in a glass bowl. Add the juice of a lime and an equivalent amount of oil. Sprinkle with nutritional yeast and pepitas. Toss.

Chicken BBQ at Pawling Ave UMC
TROY – Meals will be served Saturday, April 24, 2021 from 3-4:30 pm on the lawn at 520 Pawling Ave, Troy, NY. Take Out only. Menu: 1/2 chicken, baked potato, baked beans, cole slaw, roll, water and brownie. Cost is $12 for adults 12 and up; $6 for children 6-11 and Free for children up to 5 years old. Castleton Kiwanis Chicken BBQ on April 25
CASTLETON – The Castleton-Schodack Kiwanis Club will be firing up the grill and selling our famous Chicken BBQ dinners on Sunday, April 25, 2021. All proceeds stay here in our community, helping to improve the lives of local children. The cost of the dinners is $10 each, and each meal includes a half-chicken, baked potato and coleslaw. Dinners can be picked up between 12:00pm and 4:00pm at the Castleton Fire Company, located at 11 Green Ave in the Village of Castleton. Please note that we will offer drive-through dinner pick-up only; customers must stay in their vehicles, and pre-orders / specific pick-up times are strongly encouraged. Spring 2021 Chicken BAR-B-Q
POESTENKILL – The Evangelical Lutheran Church of Poestenkill, 772 Route 351, Poestenkill, NY 12140 will hold our Spring 2021 Chicken Bar-B-Q on Saturday, May 1st at the church with a DRIVE-THROUGH, TAKE-OUT ONLY dinner.
The meal consists of: ½ chicken, baked potato, green beans, Cole slaw, cranberry sauce, roll and choice of homemade Cherry or Lemon Meringue pie for dessert for a donation of $13 per meal or $7 for ½ chicken only while supply lasts.
Pick-up time begins at 4:30 pm & ends at 6 pm. We would greatly appreciate EARLY pre-orders for the meals or ½ chicken only by calling (518) 283-1447. Walk-in meals ONLY IF AVAILABLE, as our Fall 2020 dinner was sold out. Thank you for your support.
We will be wearing face coverings and request you do the same while visiting us. Outdoor social distancing will be practiced.
Kiwanis Club of Troy Giffy’s Chicken BBQ
TROY – The Kiwanis Club of Troy is having their annual Giffy’s Chicken BBQ Friday May 14th from 4-6PM at St. Michael’s Church, Next to HVCC, in Troy. Scout Troop 166 Chicken BBQ Dinner
Nassau – Scout Troop 166 will be holding a take-out chicken bar-b-q dinner event on Saturday, May 15, 2021 from 4:30 pm to 6:30 pm at the Chandler Young VFW Post. Each dinner will include a half chicken, baked potato, coleslaw, corn bread and a cookie. This is a take out only event.
